While I don't really have a bike recommendation, I do recommend picking a bike that has clearance for wider tires. Wider tires mean lower tire pressure, more comfort, and lower rolling resistance.
I have a Diamondback Haanjo 4 and a Poseidon Redwood. Upgrading the Haanjo from the stock 38mm tires to some 45mm Panaracers made the bike feel so much better. On the Poseidon I swapped to a 700c wheel set and put on some WTB Venture 50mm tires. Both bikes are super comfortable now.

Trailer is definitely the way to go. I picked up an old kid trailer ~7 years ago at a yard sale. Ripped all the kid stuff off, cut a sheet of plywood to shape, and then bolted the plywood to the frame. With a few holes to attach straps/bungees it can haul most things.

It's not too terrible to set up a RO server. There's even a guide to running one on a Raspberry Pi.
I followed the guide a few years back and it worked out pretty well. Instead of setting up a site to create user accounts I just ended up manually adding users to the database.

Technically, the "best" option would be to VLAN the WiFi network separately from a wired network where all the important devices are connected.
But honestly, for normal people, that's over the top. Try WPA3 first and see if you have any devices that won't work over it. If you run into issues, swap over to WPA2. I generally say start stricter and loosen the metaphorical belt only as necessary.

Downloading music from YouTube will get you MP3s, but they will have gone through the YT compression algorithms.

Everyone else has described the complications that a Mac mini would have. So why not consider something else? Lenovo, HP, and Dell make 1l ultra small form factor PCs and they're pretty cheap on eBay. They're also low power. Search for Tiny Mini Micro to find information.
I have three Lenovo Thinkcentre machines - two with 32gb RAM and one with 64gb RAM - running my Proxmox VE cluster. Highly recommend using those small machines instead of a Mac mini.

I have an Old Man Mountain Divide for my rear rack on my Haanjo. Also have an Old Man Mountain Pizza Rack that I use as the front rack on my commuter bike. They are both axle mounted which strengthens the whole setup. The Divide also has a lower pannier top rail that keeps the top of the rack more accessible for mounting stuff on top.
My only issue with their rack system is price. The racks themselves aren't cheap and adding the thru axle brings the price up even more. I decided I'd rather spend more once rather than end up having issues while away from home.

As someone who has dealt with a couple dozen Surface devices in a corporate setting, I cannot recommend them. They're fine when they work. When they have issues though, they are practically impossible to repair. Keyboard port issues, dock connection issues, bricked devices, and even expanding batteries are all issues I've run into. When you have an issue, Microsoft will just swap it out for a different one rather than fix the device.
