Shizuku and App Ops work together to give you more control over app permissions. You can restrict a lot this way.

Remove Google apps as part of the debloat process, restrict permissions beyond what Android allows by default for all system apps, using App Ops and Shizuku. Accomplishes the same thing as GrapheneOS.

I'll avoid GrapheneOS like the plague. Most of the code is written by someone that's extremely mentally unstable. Additionally, I would never trust Google hardware for privacy.

I've tried searxng a few times and it's good when it works, but finding a reliable instance is difficult. I don't agree with self hosting this because then all your searches point back to you, as you're the only one using that server.

I can confirm that when I restrict Google apps, including play services, it works. For example, if I block internet access for Google Play Services, I can't receive GCM notifications anymore. Beyond that, if there is some other backdoor that goes around my VPN and restrictions, there isn't much I can do about that.
My opinion on the video is that I don't trust the code of someone that is that unstable. If I were to go with a custom ROM, I'd probably go for LineageOS.
